Marshmallow Cookies

This post shows you how to make 10 marshmallow and chocolate chip cookies in 10 easy to follow steps. They are really simple (not to mention extremely delicious!).




Ingredients:
.55g butter (and extra for greasing)
.100g butter
.65g caster sugar
.50g dark brown soft sugar
.1 egg
.1tsp vanilla extract
.110g self-raising flour
.20g cocoa powder
.20g mini marshmallows
.20g chocolate



1. Preheat the oven to 180˚c (Gas mark 6).


2. Line two baking sheets with non-stick baking paper.

3. Mix the butter and both types of sugar until pale and fluffy.


4. In a separate bowl, beat the egg and the vanilla extract.


5. Slowly mix the egg mixture into the butter and sugar mixture.

6. Sift the flour and cocoa powder into the mixture to create a dough. If it is not firm enough put it in the fridge for a few minutes.

7. Add the marshmallows and chocolate (broken into chunks).

8. Roll small amounts of dough into balls and place them on the baking trays. Bake for 10 minutes.




















9. Wait for them to cool then place them in an air-tight container.

Rocky Road

For this month's post, I decided to do something different, so I chose to do some baking and I made rocky road as there are only a few easy steps and you do not need to put them in the oven.



Ingredients:
.200g milk or dark chocolate, broken into squares
.60g butter (cubed)
.100g digestive biscuits, broken into pieces
.90g mini marshmallows
.90g halved glacé cherries
.Extra chocolate for decoration (optional)


1. Line a square tin or glass dish with baking paper.

2. Melt the squares of chocolate over a saucepan or in the microwave.


3. Add the cubes of butter to the melted chocolate.



4. Stir until the butter has melted and leave to cool for a few minutes.

5. Add in the cherries, broken biscuits and marshmallows to the chocolate mixture.



6. Mix everything together really well and put it in the tin or dish.

7. Press the mixture with the back of a spoon and drizzle with melted chocolate.



8. Put the tin or dish into the fridge for 2 hours or until firm.



9. Carefully take the rocky road out of the tin/dish and cut it into pieces.
